SO TASTY BALINESE CUISINE

For good reason, Balinese cuisine is highly appreciated by connoisseurs for its freshness, its spices and its variety, influenced by the geography of the island and its history. This makes it a tasty culinary experience for tourists discovering it for the first time. But unlike the West with its star-studded restaurants, good Balinese cuisine is everywhere, from the unlikely market food stalls as seen in the photo to the humble warungs found along the roads. Apart from the classics like nasi/bakmi goreng, nasi campur, gado-gado, sate, lawar, etc. they all have a specialty like the famous babi guling (grilled pig), bebek betutu (herb stuffed duck). Our customers Anne and Jacob on the photo, stopped at the Negara market to taste the traditional chicken porridge which they loved! Selamat makan! (Enjoy your meal!)

This is the message our kitchen team wants to send you this week. After 2 years of reduced activity, not to say sometimes non-existent, our cooks are today particularly motivated to make you discover the new Dajuma 2022 menu during this period of recovery, certainly still shy but nevertheless very present. This new version of the menu required a lot of thought with particular attention given to new vegetarian and vegan recipes. Everything should be ready in June, for your next visit. Valentine’s Day at Dajuma

Despite a still very low occupancy rate, Dajuma could not help but celebrate Valentine’s Day, the so famous feast of lovers born in Great Britain in the 14th century. Sign of passion, red roses decorated our restaurant while a special menu was concocted by our Chef at a very competitive price. Due to the pandemic, this special offer will exceptionally remain in effect until the end of February. Welcome to our little paradise and Bon appétit les Amoureux!

Failing to have foreign customers staying, flights to Bali not yet being restored, the restaurant team imagined attracting a more local clientele with a menu combining Balinese and international specialties at very attractive prices.

NEW TEPPANYAKI SKILLS AT DAJUMA

Facing the growing success of our Teppannyaki restaurant, our cook team composed of 8 cooks in total decided to expand this particular skill to 2 other colleagues. This is what happened yesterday when our Second Chef Rudi, specialist of Japanese teppanyaki cuisine, (red apron on the picture) transmitted his know-how to Dewi and our First Chef Dedi. Everything is now ready to welcome you anytime in the week in our Sinta lounge for a delicious dinner in the Japanese way!

WHY IS BALINESE CUISINE EXQUISITE?

Since a long time, Bali is famous for the quality of its cuisine. It is easy to check when you are visiting the island where beautifully decorated or more modest warungs (restaurants ) invite you to taste the delicious local specialties such as Babi Guling (Roasted pork), Bebek Betutu (Stuffed duck), Nasi Campur (Mixed fried rice) and the famous Rijsttafel (Combination of the most popular Balinese dishes). But it is also true in the daily life of Balinese families. On the picture, some kids of Dajuma staff are sharing a lunch composed of black beans soup, tumbali (meat cooked in banana leaf), rice crackers and tofu.
There are two main reasons why the Balinese cuisine is so well appreciated: Because of its location in the middle of the Indonesian archipelago, the island has been influenced through the centuries by many different cultures, each of them having brought its contribution to the cuisine. The second reason is definitively linked to the infinite variety of spices we can find in the island. Just a few of them are shown on the picture: torch ginger, star aniss, cardamon, white pepper, white ginger, cinamon, turmeric, nutmeg. Selamat makan! (Enjoy your meal!)

LUNCH ON THE BEACH

Dajuma is also the place in West Bali where it is nice to stop over for a delicious lunch on the beach. This is what is shown on these pictures where 2 groups of guests stop recently for a revigorating break around our delicious specialty called Balinese Rijsttafel. Imagine a traditional tray called Rsi Bojana, normally used for offerings, where are disposed 6 different dishes typical of Balinese cuisine. A culinary experience which is worth it. Why don’t you also stop over next time you travel from/to Java or Menjangan? We would be delighted to welcome you!

RIJSTTAFEL: A MUST OF INDONESIAN CUISINE

There is a simple way to experience the incredible wealth of Indonesian cuisine. It’s by ordering a Rijsttafel! This strange word comes from the Dutch and litterally means “the rice table”. It consists of many dishes giving a good idea of the wealth of the Indonesian cuisine. Although the dishes served are undoubtedly Indonesian, the rijsttafel’s origins were colonial. During their presence in Indonesia, the Dutch introduced the rice table not only so they could enjoy a wide array of dishes at a single setting but also to impress visitors with the exotic abundance of their colony.
Our cooks prepare a special Rijsttafel composed of the best Balinese specialties served on an offering plate usually used in the temples.
The picture was taken by our guest Roger and his spouse from Germany who particularly appreciated the dish and were asking for the recipes because “they would love to get some of their memories alive in Germany”! Selamat makan!

NEW TERRACE

Looking like a leaf fallen from the surrounding trees, we recently inaugurated a new terrace in the garden. With its 80 m2 of benkiraï wood, it is the ideal place where to savor cocktails and balinese tapas in the sunset. But not only : it is also a perfect observatory of the wild life of the cape where hundreds of birds are used to fish between two tides. Hope you will like it !
